Chicken in Coconut Milk/Tomato broth over Quinoa

Finally current… had a lot of archived meals to upload.

Tonight’s dinner was adapted from Gina at Skinnytaste:

I used chicken (pre-cooked in olive oil) instead of shrimp and put it over quinoa instead of rice because I didn’t have rice. It was very good. I think it will be even better tomorrow after it sits for a while in the fridge.
